Linnaea Arlequin Heathcote Cabernet Sauvignon 2017

Linnaea Arlequin Heathcote Cabernet Sauvignon is a whole-berry Cabernet released with some bottle age.

Everything about the handling is done by hand and slowly. Grapes are chilled overnight and cold-soaked, then destemmed into open tubs for a hand-plunged ferment on whole berries. The skins stay warm in the vessel for weeks after fermentation finishes before the wine is pressed to barrel, where it sits on lees in mostly neutral barriques for more than a year and goes into bottle unfined and unfiltered. The 2017 was then held at the winery until it had begun to mature, so it arrives with fresh fruit perfume and the first savoury hints of age already in place.

Blackcurrant and violet over cedar, dried bay and a graphite edge, the tannin long and fine-grained. Time in bottle has already started its work. Serve at 17 degrees. Good with roast lamb, steak, a beef and mushroom pie or aged cheddar.
