Linnaea Arlequin Heathcote Cabernet Sauvignon 2018

Linnaea Arlequin Heathcote Cabernet Sauvignon is an old-school Cabernet co-fermented with Petit Verdot.

A decent slug of co-fermented Petit Verdot is what sets the 2018 apart, adding colour and a darker, firmer edge to the Cabernet. The approach is unchanged and unhurried: overnight chilling, a cold soak, destemming to open tubs and a hand-plunged ferment, then weeks of warm post-ferment maceration before pressing to barrel. Stockinger oak supplies a little pretty wood without taking over, and the wine is racked off fine lees under inert gas and bottled unfined and unfiltered. Dan held it at the winery until it had entered maturity, so fresh perfume now sits alongside some developed character.

Blackcurrant, plum and violet with cedar, iron and a dusting of dried herb, structured by tannin that is firm but polished. Serve at 17 degrees, decanted. Match it with roast beef, lamb shanks, venison or a mature hard cheese.
