Little Reddie Dash Farms Blanc 2024

Little Reddie Dash Farms Blanc is a textural white blend of Riesling, Pinot Gris and a little Chardonnay from the granite hills of Bendigo.

Soave, of all things, set this one going: a favourite bistro white of Pat Underwood's that he wanted to answer with Victorian fruit. The 2024 runs 56 per cent Riesling, 42 per cent Pinot Gris and a 2 per cent dash of Chardonnay, from three neighbouring blocks at Dash Farms in Leanganook and Faraday. They share granite soils and a westerly exposition, the Riesling sitting just above the Chardonnay and the Gris off to one side as you look up the slope. Each variety came in separately: Riesling protected from air and cold-settled before a cool stainless ferment, Gris pressed firmly and moved into a 1000-litre ceramic jar with hand-crushed Chardonnay bunches to finish fermenting together.

Aromatically it sits between orchard fruit and citrus peel, with a waxy, chewy middle and a dry, faintly bitter finish that asks for food. Pour it at 10 to 12 degrees with roast chicken, a bowl of clams, or a bitter leaf salad dressed with anchovy.
