Little Reddie Mountain Fizz 2025

Little Reddie Mountain Fizz is a sparkling wine made mostly from Syrah, with a touch of Chardonnay, grown in Central Victoria.

Ninety-five per cent Syrah and five per cent Chardonnay, drawn from the Leanganook and Faraday blocks at Dash Farms and picked early to hold onto what Pat Underwood calls the snap-frozen strawberry and rose petal prettiness of the site. Whole bunches went into a long, slow press and only the cleanest juice made it to tank. Fermentation started naturally in steel before the wine moved to old French puncheons, where it finished, went through malolactic and spent time on lees. Syrah is the grape this stretch of Victoria is known for, and turning it into something pale and fine is a fair way to show it off.

Pale, dry and lightly frothy, with wild strawberry, rose and a savoury bready undertow from the lees. Serve it properly cold, around 7 degrees, as an aperitif, or with fried school prawns, jamon or a plate of salty chips.
