Louis de Grenelle Saumur Blanc Brut Grande Cuvée NV

Louis de Grenelle Grande Cuvée is the house's top Saumur Brut, given extended ageing in its deep tuffeau galleries.

The Louis de Grenelle cellars run fifteen metres below Saumur through galleries quarried out of tuffeau, the soft chalky limestone that also underpins the vineyards above. Saumur Brut is made by the traditional method from Chenin Blanc grown on clay and chalk over that same rock, with Chardonnay permitted in the blend. Grande Cuvée is selected from the better parcels and held longer on lees than the house's standard bottlings, which builds a finer bead and a fuller, more biscuity texture without losing the Chenin acidity. The Chardonnay softens the middle of the wine while the Chenin holds the line, and the wine is finished brut, so the extra weight comes from time in the cellar rather than from sugar.

Fuller and creamier than a basic Saumur Brut; serve it with scallops, roast chicken or hard cheese rather than only as an aperitif, at around eight degrees.
