Luciano Sandrone Barolo Aleste Sibi et Paucis is a cellar-aged re-release of the estate's Cannubi Boschis Barolo, in a 1.5-litre magnum.
Sibi et Paucis, roughly for the few and favoured, is the Sandrone family's museum programme. Each year 10 to 15 per cent of production of the Nebbiolo wines is held back in the winery's underground cellars and re-released closer to maturity: six years after the harvest for Valmaggiore, ten years for the Barolos. Each re-release carries a stamp on the label to distinguish it from the original bottling. Aleste is the current name for the wine long bottled as Cannubi Boschis and is still entirely from that site, 1.9 hectares near the northern end of the Cannubi hill, directly across from the Sandrone cellars. The exposure is south to south-east within a small amphitheatre, locally a conca, that traps early-morning warmth, and the soils are sea deposits of calcareous clay with sand. The magnum format slows maturation further.
Ready to serve and with a long life still ahead in this format; serve at 16–18°C, decanted, with braised beef, game or well-aged hard cheese.
