Lustau Amontillado Los Arcos NV

Lustau Amontillado Los Arcos is a dry sherry from Jerez, made in the style that begins its life under flor and finishes exposed to air.

Emilio Lustau was founded in 1896 in Jerez de la Frontera and grew from a small family concern into one of the most respected houses in the region, known in particular for championing the almacenistas, the private stockholders who aged sherry in small cellars and sold it on to the great firms. Amontillado starts as a fino, fortified lightly and aged for years beneath a living veil of flor yeast; once that veil is allowed to die away, the wine is fortified again and continues ageing in contact with air through a solera, a fractional system in which older casks are topped up with younger wine and no cask is ever fully emptied. The grape is Palomino.

Serve lightly chilled, at around 12 degrees, with consommé, jamón, aged cheese or roasted almonds; an opened bottle keeps well for some weeks.
