Description
Lustau 'En Rama' Fino del Puerto is an unfiltered fino drawn straight from the butt in El Puerto de Santa María, on the Bay of Cádiz.
Fino is made from Palomino, fermented dry and fortified only to about fifteen per cent so that a film of flor yeast can form and live on the surface of the wine in cask. El Puerto de Santa María is one of the three towns of the sherry triangle, and its position on the coast keeps the cellars cool and humid, so the flor there stays thick through the year. En rama means in the raw: instead of being clarified and filtered before bottling, the wine is drawn from selected casks and bottled with little or no treatment, which is how sherry was drunk in the bodega itself. Sacas are made in small lots.
It should be served properly cold, at around 7 degrees, with olives, almonds, jamón or fried fish, and drunk within a few days of opening.
