Description
Lustau Fino Jarana Solera Familiar is a dry fino from Jerez de la Frontera, the most delicate style of sherry and the one that depends entirely on a living yeast.
Emilio Lustau was founded in 1896 and is among the houses most closely associated with the traditional cellars of Jerez. Fino is made from Palomino, fermented out to full dryness and fortified only to about fifteen per cent, low enough for a film of flor yeast to form on the surface of the wine in the butt. The flor feeds on the wine, seals it from the air and shapes it over several years of ageing in a solera, where casks of different ages are blended by successive fractional transfers so that the finished wine is always a continuous average of what came before. Jerez's damp Atlantic air keeps the flor alive.
Serve properly cold, at around 7 degrees, in a decent-sized glass with olives, almonds, jamón or fried fish, and treat an opened bottle as a white wine.
