Description
Lustau Oloroso VORS 30 Years Old is a dry sherry from Jerez carrying the region's highest age classification.
Oloroso is the style that never sees flor: the wine is fortified above about seventeen per cent, too strong for the yeast veil to form, and so it ages in cask in full contact with air from the beginning. Over decades a portion evaporates through the wood and what remains grows steadily more concentrated. VORS, from the Latin vinum optimum rare signatum, is reserved for wines with a certified average age of at least thirty years, a claim the Consejo Regulador of Jerez verifies by laboratory analysis before it may appear on the label. Very little qualifies. Lustau, founded in Jerez de la Frontera in 1896, draws these bottlings from its oldest soleras.
It is best served at around 14 degrees in a small glass, with aged cheese, game or nothing at all, and will hold for months after opening.
