Description
Lustau Pedro Ximénez San Emilio is a sweet sherry from Jerez made from grapes dried in the sun before they ever reach the press.
Pedro Ximénez is harvested and then laid out on esparto mats in the open, where several days of Andalusian sun shrivel the bunches to raisins and concentrate their sugar enormously. What little juice can be extracted is so dense that fermentation barely begins before it is arrested by fortification, leaving a wine with several hundred grams of residual sugar per litre. It is then aged oxidatively through a solera, gathering colour and depth over the years. Lustau, founded in Jerez de la Frontera in 1896, is one of the houses that kept the style in the public eye when sherry itself was out of fashion.
Serve lightly chilled, at around 13 degrees, in a small glass, or pour it over vanilla ice cream; it keeps for months once opened.
