Description
Lustau Rare Amontillado Escuadrilla is a dry amontillado from Jerez drawn from an old solera.
Amontillado has two lives. It begins as a fino, fortified lightly so that a veil of flor yeast can form and protect it from the air, and spends years ageing that way; when the flor eventually dies, the wine is fortified again and continues in cask in full contact with oxygen, growing darker and more concentrated with each passing year. The longer that second stage runs, the rarer the wine becomes, since a proportion is lost to evaporation through the wood. Lustau, founded in Jerez de la Frontera in 1896, reserves the Rare designation for bottlings from its older soleras. The grape, as always in dry sherry, is Palomino.
It is best served at around 13 degrees in a small glass with consommé, aged cheese, jamón or roasted almonds, and an opened bottle will hold its form for several weeks.
