Description

Marc Brédif Brut Vouvray Methode Traditionnelle is a sparkling Chenin Blanc from Vouvray, made by the same method as Champagne.

Sparkling wine is no novelty in Vouvray. The appellation has made it for well over a century and it accounts for a substantial share of the region's output, which is unsurprising given a grape as high in natural acidity as Chenin Blanc and a climate this far north. The base wine comes from the tuffeau plateau east of Tours; the second fermentation takes place in bottle, followed by an extended rest on lees in cellars cut into the limestone cliff, where the temperature barely shifts across the year. Marc Brédif was founded at Rochecorbon in 1893 and has been owned by Baron Patrick de Ladoucette since 1980.

Enough for a dozen or so glasses; serve well chilled at about 8 degrees as an aperitif, or with oysters and other shellfish.
