Description
Monte Tondo Amarone della Valpolicella is made from grapes dried for months before pressing.
Amarone is produced by appassimento: Corvina, Rondinella and other local grapes are laid out on racks through the winter, losing up to forty per cent of their weight, then fermented dry. The result is a wine of great concentration and high alcohol, with the raisined character the method gives. The appellation requires extended ageing before release. Monte Tondo works in the hills east of Verona.
Decant and serve at 17 degrees with braised beef, game or aged Parmigiano. It rewards fifteen years.
