Description
Moreau-Naudet Chablis is a village Chablis from vines at Préhy in the cool southern end of the canton, offered here in magnum.
Chablis sits well north of the rest of Burgundy, on the Kimmeridgian marl of the Serein valley, and Chardonnay grown there gives the tautest, most saline wines in the region. Préhy lies at the cool southern edge of the appellation, and Stéphane Moreau's village wine is drawn from vineyards there of more than twenty years of age. At this domaine both the Petit Chablis and the Chablis are raised entirely in tank; oak-matured parcels only come into play from the Vieilles Vignes level upwards. What separates this wine from most village Chablis is time, with eighteen months of élevage, all of it on lees, against the few months that is more usual. That is the source of the textural authority the domaine is known for, arrived at without any wood to blur the ripe acidity and mineral grip. The magnum format will slow its development further.
Drink over the next several years, and longer in this size. Serve at 10-12°C with oysters, grilled whiting or a goat's cheese salad.
