Moreau-Naudet Chablis is the domaine's village wine, made with the same picking and cellar discipline as the crus above it.
Chablis lies well north of the rest of Burgundy, closer to Champagne than to the Côte d'Or, and its Kimmeridgian limestone, a marl full of fossil oyster shells, is what gives the wine its saline, chalky signature. Domaine Moreau-Naudet dates from 1950 and the marriage of Marie Naudet and René Moreau. Stéphane Moreau took over from his father Roger in 1993 and built the estate up from seven hectares to more than twenty; after his death in 2016 his widow Virginie has carried on with the cellar team, holding to the approach he set. The vineyards are farmed organically and ploughed several times a year, yields are kept low and picking is by hand and late, and the wines ferment with indigenous yeasts and sit a long time on their lees. The village wine is raised largely in stainless steel, with barrel reserved for the premiers and grand cru, so it arrives dry, taut and unadorned rather than fleshed out with oak.
Drinking now and good for a few years yet. Serve at 10-12°C with oysters, grilled whiting or a goat's cheese salad.
