Description

Mount Horrocks Cabernet Sauvignon comes from organically farmed vineyards in the Clare Valley.

Clare's altitude and cold nights give Cabernet firm structure and a leafy, blackcurrant profile rather than the sweetness of warmer South Australian regions. The variety has a long history in the valley alongside Riesling and Shiraz. Stephanie Toole has owned the estate since 1993; the wine is matured in French oak.

Serve at 17 degrees with roast lamb, beef or hard cheese. It develops over twelve years.
