Description
Murdoch Hill Chardonnay comes from the family's vineyards at Oakbank in the Adelaide Hills.
The Hills' altitude and cloud cover slow ripening, which is why its Chardonnay holds acidity and suits a restrained, lees-driven style rather than a rich one. Michael Downer, who trained in Burgundy, has made the wines here since 2011. Fruit is whole-bunch pressed, fermented with native yeast in French oak and matured on lees with minimal new wood.
Serve at 12 degrees with roast chicken, fish or a soft cheese. It develops over six years.
