Nadeson Collis Rosé de Saignée 2020

Nadeson Collis Rosé de Saignée is a zero-dosage sparkling rosé of Meunier, Pinot Gris and Pinot Noir.

Drumborg supplies the fruit again, Jack and Lois Doeven's cold Henty site, which Ray Nadeson and Maree Collis have worked for twenty-odd years and value above all for holding high natural acid at full ripeness. The blend is 42 per cent Meunier, 39 Pinot Gris and 19 Pinot Noir. Fruit was destemmed to barrel and fermented on a rolling basis, with parcels added as they arrived in the winery, then held twelve months in large puncheons with full malolactic conversion. Three years on lees in bottle followed, and at disgorgement it was topped up with wine from the twenty-year-old perpetual reserve and given no dosage.

Crushed flowers and berries, spice and a mineral snap, with delicate but potent structure, a deep core of fruit and a tight, lasting finish. Built for the table. Serve at 9 to 10 degrees. Try it with tuna tartare, grilled salmon or roast duck.
