Description

Nicole Lamarche Bourgogne Passetoutgrain is a co-fermented blend of Pinot Noir and Gamay, a style now almost extinct in the Côte d'Or.

Passetoutgrain is one of Burgundy's oldest appellations, a field blend that once accounted for much of what growers drank themselves and has been squeezed out as land values rose. The rules require at least a third Pinot Noir and at least 15 per cent Gamay; Lamarche's version runs 60 per cent Pinot Noir to 40 per cent Gamay, from a 0.43-hectare parcel across the RN74 from the village of Vosne-Romanée. The two varieties are picked and fermented together, in tank and in open wooden vats, spending about fifteen days on skins, then aged for fourteen months in the domaine's oldest barrels so that no new wood interferes. The result is bright and juicy, and made in very small quantity.

Drink now and over the next three years. Serve at 16-18°C or lightly chilled, with charcuterie, roast pork or a bowl of ratatouille.
