Ocean Eight Verve Chardonnay 2024

Ocean Eight Verve Chardonnay is a taut, mineral Mornington Peninsula Chardonnay made in a lean, linear style.

Winemaker Mike Aylward is known for pushing this grape towards leaner shapes, and this is the bottling that made his name. The fruit is picked early for natural acidity, whole-bunch pressed and wild-fermented in older French oak, then rests on lees without full malolactic, so there's no buttery edge. Tension, citrus and texture lead, and it rewards a few years in the cellar.

Fine and saline, with citrus and white stone fruit over a chalky finish. Try it at 10–12°C with oysters, crab, grilled white fish or lemony roast chicken.
