Old Kempton Embezzler Gin 50ml

Old Kempton Embezzler Gin 50ml is a miniature of the distillery's Tasmanian London Dry gin.

Fifteen botanicals go into this one, juniper and citrus at the front with Tasmanian material filling in behind; the full bill takes in orris root, star anise, cassia bark, cardamom, liquorice root, chamomile, jasmine, mint, allspice, lemon myrtle, makrut lime leaf, coriander seed and both orange and lemon peel. They sit in a muslin cloth in cane sugar base spirit inside the still for a day before a one-day distillation. The name belongs to William Henry Ellis, shipped out from England in 1825 after an embezzlement conviction, who married well in Tasmania and built Dysart House, the building the distillery now occupies.

Bright citrus and pepper over present but unshowy juniper, the cane spirit's natural sweetness keeping the lemon notes ripe. Delicate and long enough to sip neat over ice. It also holds up against tonic: a classic tonic for brightness, a dry one to let the florals through.
