Old Kempton Six Shillings Gin 50ml

Old Kempton Six Shillings Gin 50ml is a miniature of the distillery's contemporary Old Tom-style Tasmanian gin.

The name refers to the sum William Ellis, the former convict who built Dysart House, admitted to embezzling; the actual figure was nearer six thousand pounds. Fourteen botanicals go in, juniper and coriander leading, with dried orange, mango, pineapple and kiwi fruit, plus Tasmanian pepperberry, chamomile, angelica, mint, nutmeg, cardamom, lemon thyme and lemon. They steep in a muslin cloth in cane sugar base spirit inside the still for a day before a one-day distillation. The Old Tom reference explains the sweetness, though the fruit load takes it somewhere tropical no historical Old Tom ever went.

Dried mango and mint on the nose with a saline flicker and juniper sitting behind. The palate is tropical, kiwi especially, silky and lightly sweet, closing on hay and minerals. It makes an excellent gin and juice, and stands up in fruit-forward cocktails or a softer Martini.
