Olivier Leflaive Chassagne-Montrachet is a village white Burgundy from the Côte de Beaune, made entirely from Chardonnay.
Olivier Leflaive founded his house in Puligny-Montrachet in 1984, and it has grown into one of the most dependable sources of white Burgundy, working with its own vines and with fruit from long-standing grower partners. Chassagne-Montrachet is the southernmost of the three great white wine villages of the Côte de Beaune. Its soils shift from deeper clay near Santenay to lighter, stonier ground towards Puligny, and blending across parcels gives a wine with both substance and finesse. After gentle pressing, the juice goes through alcoholic and malolactic fermentation in oak barrels, where it is then aged before bottling.
Aim for 11 to 13 degrees, as serving it too cold will mute the texture. Good partners include roast chicken, pan-fried flounder in brown butter, crayfish, or veal with mushrooms. It can be enjoyed now and should develop nicely over six to eight years.
