Olivier Leflaive Saint-Aubin 1er Cru Dents de Chien 2023

Olivier Leflaive Saint-Aubin 1er Cru Dents de Chien is a saline, finely etched white Burgundy from a steep premier cru on the border with Puligny-Montrachet.

Dents de Chien, or 'dog's teeth', takes its name from the jagged limestone in its thin, stony soils. It sits on the upper part of the hill where Saint-Aubin meets Puligny-Montrachet. The south-facing slope, at around 250 to 300 metres, drains freely and gives Chardonnay a cool, mineral profile. Three plots are blended for this cuvée, all harvested by hand and pressed as whole grapes. Both fermentations take place in oak barrels, and the wine is matured for about a year, mostly in barrel with a modest share of new oak, before a short spell in tank ahead of bottling.

Chill it to around 10 to 12 degrees and serve with seared tuna, grilled prawns or spring vegetable dishes. It's at its best within its first five or six years.
