Olivier Merlin Pouilly-Fuissé Les Chevrières 2021

Olivier Merlin Pouilly-Fuissé Les Chevrières is a single-vineyard Chardonnay from the leading appellation of the Mâconnais.

Pouilly-Fuissé spreads across four communes below the great limestone rocks of Solutré and Vergisson and has held its appellation since 1936. Growers here have long bottled individual climats separately, and in 2020 twenty-two of them were classified as premier cru, the first premier crus anywhere in the Mâconnais. Les Chevrières is one of the named sites within the appellation, bottled on its own by the domaine rather than blended into the village wine. Olivier and Corinne Merlin took over the Domaine du Vieux Saint-Sorlin at La Roche Vineuse in 1987 and are among the growers most responsible for the region's rise, working with whole-bunch pressing and barrel ageing on lees; their son Théo now works alongside them.

Serve at around 12 degrees with lobster, veal or poultry in a cream sauce; it will hold comfortably for five years or more.
