Olivier Merlin Saint-Véran Le Grand Bussière 2021

Olivier Merlin Saint-Véran Le Grand Bussière is a single-vineyard Chardonnay from the southern end of the Mâconnais.

Saint-Véran dates only from 1971, a late arrival among Burgundy's appellations, and covers Chardonnay grown in a small group of communes in two blocks that sit either side of Pouilly-Fuissé, sharing the same limestone geology. Le Grand Bussière is one of the parcels the domaine bottles on its own rather than folding into a village blend. Olivier and Corinne Merlin took on the Domaine du Vieux Saint-Sorlin at La Roche Vineuse in 1987 and have spent the years since making the case that the Mâconnais can be treated as seriously as the Côte d'Or, with whole-bunch pressing, fermentation in barrel and extended ageing on lees; their son Théo now works with them, and the domaine has become one of the most closely followed in the south of Burgundy.

Serve at around 12 degrees with poultry, veal or richer fish; it will reward a few years in bottle.
