Outlandish Claims Bitter Tonic Rosé

Outlandish Claims Bitter Tonic Rosé is a Canberra vermouth made from Nebbiolo aged under flor.

The base is entirely Nebbiolo, made first as a pink wine and then aged under a flor yeast veil in the manner of Jerez, an oxidative approach that gives the finished drink a nutty, saline character no ordinary rosso carries. Onto that goes a tincture built from wormwood, cinchona, pepperberry leaf, juniper, coriander and blood orange. Bryan Martin, better known for his winemaking at Clonakilla and for his own Canberra label, keeps these in small batches and bottles them unfiltered. Vermouth obsessives and Sherry drinkers will both find something familiar here.

Fresher and zestier than a typical rosso, with bitter orange, wormwood and a briny, flor-derived edge. Chill it and drink it as an aperitif with manzanilla olives, or put its firm body to work in a dirty Negroni or a Manhattan.
