Palliser Estate Riesling 2025

Palliser Estate Riesling is a pristine, dry white that can be enjoyed young or cellared for a decade.

Grown in the estate's vineyards around Martinborough township, this Riesling reflects a cool, windswept corner of New Zealand where acidity stays high and flavours stay pure. The 2025 is pale lemon, offering lime, mandarin, jasmine, orange blossom and wet stone. It is dry and clean, with lemongrass and kaffir lime giving way to green apple and finger lime, then a long, slatey finish. The winery suggests cellaring through 2035 and beyond for waxy, toasty development.

Chill it and pair with sashimi, a Thai green papaya salad or grilled prawns with lime.
