Palliser Estate Single Vineyard Om Santi Chardonnay 2022

Palliser Estate Single Vineyard Om Santi Chardonnay is a bold, complex Chardonnay from one of the estate's prized Martinborough sites.

Bottled separately to capture the particular character of the Om Santi vineyard, this is one of the estate's single-site releases. Martinborough's warm, dry summers and cool nights give Chardonnay both richness and a firm spine of acidity, and this wine leans into the rich side with power and length. Pale lemon with gold flecks, it shows peach, lemon meringue, hazelnut, nougat, vanilla and almond butter. The palate is mouthfilling, creamy and mealy, with layers of peach and crème brûlée before fresh acidity and a saline finish.

Serve at 10 to 12 degrees, not too cold, with lobster, roast pork loin, chicken in a creamy tarragon sauce or aged Comté.
