Paolo Scavino Barolo 'Bric dël Fiasc' DOCG is a single-vineyard Nebbiolo from the commune of Castiglione Falletto, at the centre of the Barolo zone.
Bric dël Fiasc is the dialect name for the Fiasco vineyard, which lies on the ridge below the village of Castiglione Falletto, a commune sitting on the divide between the sandier soils of the Serralunga side and the bluer marls towards La Morra and Barolo. Paolo Scavino began bottling the site separately in the late 1970s, one of the earlier single-vineyard Barolo in the zone, and it remains the estate's flagship. The family has been established at Castiglione Falletto since 1921. Barolo is made from Nebbiolo alone and must age at least 38 months, 18 of those in wood, before release. The estate now farms parcels across several of the Barolo communes, but Fiasco remains the site most closely tied to its name.
It repays decanting and suits braised beef, game or aged hard cheese.
