Paolo Scavino Barolo 'Bussia-Fantini' DOCG is drawn from Bussia, the sprawling and historic cru that climbs the hills of Monforte d'Alba.
Bussia is one of the largest and most storied named vineyards in Barolo, covering a long stretch of slope in Monforte d'Alba, and the better parcels within it have been prized since the nineteenth century. Fantini is one of the sub-plots recognised within that wider area. Monforte tends to give Barolo of firm structure and slow evolution, a reflection of its altitude and its compact marl and sandstone soils. The Scavino family have made wine at Castiglione Falletto since 1921, with Enrico Scavino at the helm since the 1950s and his daughters Enrica and Elisa now alongside him, fermenting with long macerations and ageing in French oak.
Give it a generous decant, an hour at the least, and serve at around 18 degrees with roast or braised red meat, or with a well-aged hard cheese.
