Paolo Scavino Barolo Cannubi DOCG 2018

Paolo Scavino Barolo Cannubi DOCG comes from the most famous hill in Barolo, the long central ridge that runs above the village itself.

Cannubi has a documented history stretching back to the eighteenth century, when bottles were already being labelled with the vineyard name, making it one of the earliest identified crus anywhere in Italy. Its sandy, calcareous marl soils sit where the two principal geological formations of the zone meet, which is often given as the reason for the balance of its wines. Paolo Scavino has held parcels here for decades. The estate dates to 1921, and Enrico Scavino has led it since the 1950s with his daughters Enrica and Elisa. The Nebbiolo undergoes a long maceration and is aged in French oak.

Decant thoroughly and serve at around 18 degrees with roast veal, braised beef or aged hard cheese. Bottles will continue to develop in the cellar for many years.
