Paolo Scavino Barolo 'Prapo' DOCG is a single-vineyard Barolo from Serralunga d'Alba, the commune that gives the most structured wines in the zone.
Prapò lies on the slope above the village of Serralunga d'Alba, on the eastern ridge of the Barolo appellation, where the older, more compact soils yield Nebbiolo of firm frame and long life. Serralunga has been associated with the most age-worthy expressions of Barolo since the earliest days of the modern appellation. The Scavino estate was founded in 1921 at Castiglione Falletto and has been shaped by Enrico Scavino since he joined his father in 1951; his daughters Enrica and Elisa now work with him. Fermentation involves a long maceration, with maturation in French oak before release.
Decant an hour or more ahead and serve at around 18 degrees with braised beef, game or a well-aged hard cheese. It is a wine built for the long term and will reward patience in the cellar.
