Description
Pascal Jolivet Pouilly Fumé is a dry Sauvignon Blanc from the eastern bank of the Loire, made by one of the best-known producers in the Central Vineyards.
After starting out as a négociant in Pouilly-sur-Loire, Pascal Jolivet established his own domaine in 1982 and put his name on the label from 1987. The estate now has around 28 hectares across Sancerre and Pouilly-Fumé, spread over the three classic soil types of the area: chalky caillottes, the limestone and clay marls called terres blanches, and flinty silex. Winemaking is deliberately hands-off. The juice is settled naturally, fermented with wild yeasts at controlled temperatures and left on its lees, with sulphur kept low, so that the wine reflects where it was grown.
Pour it well chilled as an aperitif, or with oysters, goat's cheese, grilled whiting, asparagus or a herb salad. It is light-bodied, dry and crisp. Most bottles are at their best within three or four years of vintage.
