Description
Pascal Jolivet Sancerre is a Sauvignon Blanc from the hills of the upper Loire, and one of the reference points for the appellation.
Sancerre occupies a set of steep hills on the left bank of the Loire, close to the geographic centre of France, and its vineyards divide roughly into three soil types: chalky clay called terres blanches, limestone gravel known as caillottes, and flint. That variety, together with a cool northerly climate, accounts for the precision the name is known for. Pascal Jolivet established his house in the town in 1987 and has become known for a hands-off method, using indigenous yeasts, no oak at all and long cool fermentations in stainless steel, with the aim of transparency to site rather than cellar craft. Sauvignon Blanc took over here only after phylloxera; before that the hills grew mostly Pinot Noir.
Serve well chilled with goat's cheese, shellfish or on its own as an aperitif.
