Pascal Jolivet Sancerre is a classic, mineral Sauvignon Blanc from the eastern Loire Valley.

Founded in 1987, the Pascal Jolivet domaine has become one of the leading names in Sancerre and Pouilly-Fumé. The house follows a natural approach, favouring wild yeasts and minimal intervention so the fruit and site speak clearly. Sancerre's vineyards spread across chalky limestone, clay-limestone and flinty silex soils, which give the wines their precision and mineral cut. This is the domaine's signature Sancerre, made in the elegant, balanced house style: dry, with natural fruit and a clear mineral thread.

Serve well chilled with goat's cheese (Crottin de Chavignol is the local match), grilled fish, asparagus or a classic chicken and tarragon dish.
