Pascal Reverdy Sancerre Terre de Maimbray is the domaine's classic white Sancerre, fermented and aged entirely in tank.
Sancerre runs across steep hills on the left bank of the upper Loire, where Sauvignon Blanc is planted on three soil types: the chalky Kimmeridgian marl called terres blanches, the shallow limestone gravel of the caillottes, and flinty silex nearest the river. Domaine Pascal Reverdy is based at Maimbray, in the commune of Sury-en-Vaux at the northern end of the appellation, and farms its vines organically. Terre de Maimbray takes its name from that home hamlet and is the estate's principal white bottling, drawn from clay-limestone slopes across the holding rather than from a single named lieu-dit. The whole cuvée is fermented and matured in tank, with no oak at any point, a choice that keeps the wine transparent to its site and to the vintage. Sury-en-Vaux lies at the cooler northern edge of the appellation, which preserves acidity.
Dry, taut and citrus-scented, it is the classic match for oysters, asparagus and Loire goat cheeses such as Crottin de Chavignol; serve at around 10 degrees.
