Patrick Sullivan Bull Swamp Chardonnay 2025

Patrick Sullivan Bull Swamp Chardonnay is a single-vineyard Chardonnay from the cool country of West Gippsland in Victoria.

Each of the best sites this Gippsland-based winemaker works with gets its own bottling, so the differences can be tasted side by side, and this is one of them. Long, mild growing seasons in this green part of the state let the grapes ripen slowly and hold firm acidity, giving a wine of line and restraint. Production is small, the hand is light, and quantities are limited.

Fine, focused and savoury, and it will cellar well. Good at 10–12°C with crab, pan-fried whiting, tarragon chicken or a hard cheese such as Comté.
