Patrick Underwood Dash Farms Chardonnay 2023

Patrick Underwood Dash Farms Chardonnay is a single-site Chardonnay from granite soils at Harcourt in the Bendigo region.

Vines planted in 1999 on granite, quartz and sand at Harcourt supply the fruit, a single clone worked as one parcel. The 2023 growing season closed out a cool run of three, though with less disease pressure than 2022 brought, which made for a long and unhurried ripening; Pat Underwood picked on the earlier side to hold the line between fruit and freshness. Bunches were foot-crushed, pressed slowly and settled overnight before a cool tank ferment, since he likes the long, even fermentation arc that tank gives him. Partial malolactic followed, then a year in barrel, then racking and a January 2025 bottling.

Citrus and white nectarine with a chalky, faintly briny finish, oak tucked well out of the way. It has drive and length more than weight. Serve at 12 degrees with grilled snapper, roast chicken or a leek and gruyere tart.
