Paul Bara Grand Rosé de Bouzy is a grand cru rosé Champagne coloured with the estate's own still red Pinot Noir, offered here in magnum.
Bouzy has long been known for still red wine as much as for Champagne, and Paul Bara's rosé is made in the traditional local way, by blending a portion of that red Pinot Noir into the base wine rather than by bleeding juice off the skins. Everything comes from the family's own grand cru parcels within the village, on the south facing chalk of the Montagne de Reims, where the Bara family has grown vines since 1833 and holds around eleven hectares. Pinot Noir leads the assemblage with Chardonnay in support, and the wine is aged on lees in the village cellars before disgorgement at five grams per litre. In magnum the wine holds its freshness longer, the format ageing more slowly than the standard bottle.
Fuller and more savoury than most rosé Champagne and scaled for a table, it suits salmon, duck breast and charcuterie; serve at around ten degrees.
