Description
Paul Chavy Aloxe-Corton rouge is a village red from the foot of the hill of Corton, at the northern end of the Côte de Beaune.
Aloxe-Corton lies at the point where the Côte de Nuits gives way to the Côte de Beaune, wrapped around the eastern and southern flanks of the hill of Corton. The village vineyards sit below the grand cru band on deeper, iron-rich brown limestone soils that turn the earth a distinctive rust red, and they give Pinot Noir a firmer, more tannic and more savoury profile than the communes further south. Young Aloxe-Corton is often closed and earthy and rewards keeping for a few years. The reds are generally destemmed, fermented with a longer cuvaison than the lighter communes and aged in oak barrel for a year or more with a modest share of new wood.
Firm and savoury, it suits beef, game and hard mountain cheeses; serve at around 17 degrees.
