Description

Paul Chavy Bourgogne Pinot Noir is a regional red Burgundy, the appellation that covers Pinot Noir grown across the region.

Bourgogne is the regional appellation of Burgundy, drawing on vineyards outside the village boundaries: the flatter ground below the Côte, parcels on the plateau above it and land in the Hautes-Côtes and further afield. For red, Pinot Noir is effectively the only grape used, and the style is lighter and earlier drinking than village wine, built on red cherry and raspberry fruit, fresh acidity and fine tannin. Quality depends almost entirely on who is making it and where the parcels sit, and vines bordering the village appellations can give very good results. Wines at this level are normally destemmed, given a short cuvaison and aged for around a year in used oak barrel or tank so the fruit stays direct.

An easy, fruit-driven red for everyday drinking, it suits charcuterie, roast chicken and mushroom dishes; serve at around 15 degrees or lightly chilled.
