Description
Paul Chavy Chassagne-Montrachet Morgeot is a premier cru from the largest and richest climat at the southern end of the commune.
Morgeot is the largest premier cru climat in Chassagne-Montrachet, a sprawling sector at the southern end of the commune on heavier, more clay-rich soil than the vineyards nearer Puligny. Whites from Morgeot are correspondingly broad and powerful, with more flesh and a firmer frame, and they generally need a few years to settle. Chassagne itself is planted to both colours and its whites have moved steadily towards a leaner, more precise style over the past two decades. Chardonnay from Morgeot is whole-bunch pressed and fermented and aged in barrel, with new oak kept in check and time on fine lees to build texture.
Broad and powerful, it suits lobster, veal and poultry in cream sauces; serve at around 12 degrees.
