Paul Chavy Corton-Charlemagne is a grand cru white from the chalky upper band of the hill of Corton.
Corton-Charlemagne is the white grand cru of the hill of Corton, a broad band of vineyard running around the upper slope through Aloxe-Corton, Pernand-Vergelesses and Ladoix, where marl-rich, chalky soils and a cooler, higher position replace the iron-red earth that suits Pinot Noir lower down. It is among the most structured white wines in Burgundy, typically closed and severe in youth, with an almost stony austerity that gives way over ten to fifteen years to something powerful and honeyed. Chardonnay here is whole-bunch pressed and fermented and aged in barrel, with new oak used sparingly by most growers so that the site's firmness is not masked.
Built for the cellar; with age it suits lobster, turbot and Bresse chicken in cream, and is best served at around 12 to 13 degrees.
