Paul Chavy Gevrey-Chambertin 2023

Paul Chavy Gevrey-Chambertin is a village red from the largest and most powerfully structured commune of the Côte de Nuits.

Gevrey-Chambertin has more vineyard than any other commune on the Côte de Nuits and nine grand crus along its southern slope. The village appellation covers a wide spread of ground, from the deep alluvial soils on the flat east of the road, through the mid-slope parcels below the premier crus, up to the cooler, stonier land in the Combe de Lavaux behind the village. The wines are the most robust of the Côte de Nuits: dark fruited, firm and tannic when young, with a savoury, meaty depth that emerges with age. Reds here are usually destemmed or given a portion of whole bunches, fermented with an extended cuvaison and aged twelve to eighteen months in oak barrel with a share of new wood.

Dark and firmly built, it suits beef, game and rich braises; serve at around 17 degrees.
