Paul Chavy Pernand-Vergelesses En Caradeux is a premier cru on the western flank of the hill of Corton, directly below the Corton-Charlemagne band.
En Caradeux is a premier cru of Pernand-Vergelesses on the western flank of the hill of Corton, and its upper sections run right up to the Corton-Charlemagne boundary. The exposure here is cooler than on the Aloxe side of the hill, and the whites are firm and mineral, built on acidity and stony length rather than richness, with a clear family resemblance to the grand cru above them. Pernand has long been the value corner of the Corton hill for white wine and its wines often need a couple of years to open. Chardonnay from these slopes is normally whole-bunch pressed and fermented and aged in barrel with a modest share of new oak and a long spell on fine lees.
Firm and stony, it suits river fish, roast chicken and gruyère; serve at around 12 degrees.
