Description

Paul Chavy Pommard Les Chanlins Haut comes from the upper slope at the northern end of Pommard, on the boundary with Volnay.

Pommard sits between Beaune and Volnay and makes only red wine, from clay-rich soils with a notable iron content that give the most solidly built reds of the Côte de Beaune: dark fruited, firmly tannic and slow to open. Les Chanlins lies at the northern edge of the commune where it meets Volnay, high on the slope; the premier cru section is Les Chanlins-Bas below, while the upper parcels are classified at village level. Altitude and thinner soils here temper Pommard's usual weight, giving a red that keeps the appellation's structure with rather more lift. Reds from these sites are typically destemmed, fermented with a moderate cuvaison and aged in oak barrel with a small share of new wood.

Structured and dark fruited, it needs a few years and suits beef, game and mature cheese; serve at around 17 degrees.
