Description
Paul Chavy Puligny-Montrachet Garenne is a premier cru white from the high, stony shoulder of the village where the slope climbs towards Saint-Aubin.
La Garenne sits at the top of the Puligny slope, among the highest of the village's premier crus at close to three hundred and forty metres, on thin brown soils with limestone never far below the surface. Its altitude and exposure make it one of the cooler sites in the commune, and the wines are correspondingly firm and linear, built on citrus and salt rather than the breadth found in Les Combettes or Les Perrières lower down. They tend to be closed in youth and reward five to ten years in bottle. Chardonnay from here is normally whole-bunch pressed, fermented and aged in barrel with a restrained proportion of new oak, then held on fine lees to build texture without softening the acidity.
Taut and mineral in youth, it suits turbot, scallops and poultry in a cream sauce; serve at around 12 degrees.
