Paul Chavy Saint-Romain La Perrière 2022

Paul Chavy Saint-Romain La Perrière is a single lieu-dit white from one of the highest and coolest corners of the Côte de Beaune.

Saint-Romain occupies a cool amphitheatre behind Auxey-Duresses, ringed by limestone cliffs, with vineyards running from around three hundred to over four hundred metres. La Perrière is one of the village lieux-dits on the stonier ground where rock was once quarried, and its whites are cut and chalky, with high natural acidity and a lean, mineral frame rather than the breadth of the villages on the main slope. The appellation was long the value corner of the Côte de Beaune and has become steadily better regarded as warmer vintages have suited its altitude. Chardonnay here is normally whole-bunch pressed and raised in barrel with very little new oak.

Bright and chalky, it is a good foil for oysters, shellfish and fresh cheeses; serve at around 11 degrees.
